Wo durch kommt dieser Fehler:
Failed to interpolate config for stack npm. Error: compose config operation failed: failed to load the compose file: validating /data/compose/8/v1/docker-compose.yml: services.app.environment must be a mapping

Muss eventuell der Pfad auf dem Host für ./data und ./letsencrypt angepasst werden?

in Deinem YAML-File hast Du "environment:" stehen, allerdings ohne jegliche Mappings, vielleicht nimmst Du das einfach mal raus.

EDIT: Wenn man sich mal die Anleitung vom Hersteller (s. https://nginxproxymanager.com/guide/#quick-setup) anschaut, steht dort als Quick-Setup auch eine entsprechende Definition, allerdings ohne "environment":

Du hast derweil anscheinend die "Full Setup Instructions" genommen, wobei da im kompletten environment-Block nur Kommentare hinterlegt sind. Entweder packst Du dort noch etwas rein, z.B. etwas in diese Richtung...
